Hiya papaya, it‘s your friendly neighborhood Lotte, here with a new blog for the Dutch culture series. This time I’ll be talking about some typical Dutch food, specifically the smoked sausage, so let’s get going, shall we?

A rookworst or smoked sausage is a Dutch sausage consisting of ground meat mixed with spices and salt which is then stuffed into a casing. When it first started being eaten, the casing was an intestine, but recently it’s usually made of bovine collagen.

Traditionally the sausage was smoked over smoldering wood chips and made of pork. Today most of the ready available sausages you can find in the grocery store are not smoked, but have smoke aromatics added instead. Besides this, there has also been a change in the type of meat, recently the sausage is also available with turkey instead of pork.

The recipe has most likely been altered through the years but based on a Dutch cookbook of 1940, the proportions are 4 parts of pork to 3 parts of veal and 3 parts of bacon. This meat mixture is then salted and has saltpeter, sugar and nutmeg added, after it’s forced into pig intestines.

There are two types of rookworst that are commonly eaten in the Netherlands.

1. The most common one is a cooked sausage that is sold in a vacuum pack. This type of sausage only needs to be reheated in a pan of hot water. It’s also called the Gelderse rookworst, as it came from/made in the manner of Gelderland.

2. The second type is the raw rookworst, this sausage is, as the name suggests, still raw when you buy it and needs to be cooked before being eaten. Often but not always this type of sausage is still made with a natural intestine instead of the bovine collagen.

You can eat this sausage on its own with some mustard or in a hotdog bun, however in the autumn and winter months it’s often eaten as meat in a meal.

One of the most common foods that contains rookworst is snert, which is a thicker type of pea soup. Besides snert rookworst is eaten with various types of mashed potato stew. Such as kale, sour kraut, carrots and onion or endive lettuce.
