MINI

FLOWER PANCAKES ᵕ̈

                  — 165g homemade instant pancake mix

                   — 1 large egg

                  — 2 Tbsp vegetable or coconut oil

                   — 140ml water

                  — 2 large strawberries

                  — 1 round slice watermelon

                   — 1/2 teaspoon vanilla extract

                  — 1 round slice pineapple

                  — 4 bluberries

                  — STIX plastic skewers

➥Step 1

First, make the mini pancakes. These

taste best when served warm from

the pan but can also be made in advance

and stored in an airtight container in

the fridge for a day if necessary. Place 165g

of the homemade pancake mix in a large

bowl. Break 1 large egg into a glass and

lightly whisk. Melt the oil and add to the

dry pancake mix along with the whisked egg

and 140ml of water. Lightly whisk everything

together until just combined

➥Step 2

Spoon the pancake mix into a sauce

bottle or piping bag then leave to rest

for 5 minutes while you heat up the pan.

If you don’t have a sauce bottle or piping

bag, just leave the mixture to rest in

the bowl and use a teaspoon to make

the pancakes instead. Heat a frying pan

on the hob over a medium heat. Add a

little oil and swirl it around the pan. Draw

and then fill in mini circles of pancake

mixture to make your pancakes, making

sure you leave enough room between the

pancakes to flip them over once ready.

➥Step 3

Cook the pancakes until they start to

bubble up, then flip them over and cook on

the other side until golden. Remove from the

pan and repeat until all the mixture is used

up. If making in advance, leave the pancakes

to cool then pop in an airtight container in

the fridge until ready to serve. Use flower

shaped mini bento cutters to cut flower

shapes from the fruit. To make the

strawberry flowers, slice the strawberry

into thick rounds before cutting into shape

Stack the mini pancakes, 4 or 5 to a pile.

Push a fruit flower onto a plastic skewer,

then push into a stack of pancakes to hold

it all together, with the fruit flower on

top. Repeat with the rest of the stacks.

Place on a platter or board and serve immediately.

Motivation and Focus All the Way to the End!

As the school year is wrapping up and coming to an end, you may start to drift a little bit in your focuses in school. don’t lose focus of your grades and start to try less just because the school year is almost over. work hard all the way until it’s over to ensure your grade and all your hard work pays off!

Ways to motivate yourself are to firstly, know your goals. having an idea of what you are trying to achieve is the first step in achieving them. it can simply be i want to finish this assignment before a set amount of time or i will email a teacher to ask if there’s any way i can raise my grade. that if you get tired you always have someone to talk to and rant your feelings to. it could be family, friends, or one of us. you don’t have to hold it in, we’re always gonna be here for you! next, find a short thing you enjoy doing between your breaks, when doing your assignments for a long period of time it can get stressful and boring. try finding your brief escape. like, something you enjoy doing, mine, is skating and then coming back, stretching and continuing on my studies. it’s not much but it makes me less stress even if just for a moment.

Lastly i just wanted to say you’re doing amazing, and you’ve worked so so hard! if you haven’t heard it yet, I’m so proud of how far you’ve gotten, just hang in there a little more and before you know it the stresses will be over. even if you’re not in school or if schools not ending soon. these small tips could help you focus and not dislike what’s going on as much. you got this!

STOPPING THE SPREAD OF COVID-19 IN VULNERABLE COMMUNITIES

2021 will be a critical year for all of us — a test of our resolve to eradicate COVID‑19 and our commitment to addressing its long-term impacts.

We know that COVID‑19 is not only a threat to people’s health and livelihoods today, it’s also amplifying dangerous, complex challenges that threaten the world’s most vulnerable communities for years and even decades to come. Four of the biggest issues Mercy Corps teams will focus on this year include:

1. Getting COVID‑19 vaccines to everyone who needs them will require an unprecedented effort to build trust within communities wary of their governments.

2. Disrupted supply chains will continue to threaten the precarious livelihoods of small farmers, further limiting access to nutritious food for millions who are already hungry.

3. Misinformation will intensify existing conflicts and undermine public health efforts in communities where safety is a daily concern.

4. The economic impact of lockdowns will make it even harder for young people to find employment and for small businesses to survive.

The scope and scale of this new reality will take shape in 2021, requiring collaboration across cultures, governments, and humanitarian aid and development organizations. The United Nations predicts 235 million people will need humanitarian aid in 2021, up 40% from 2020.

Mercy Corps teams around the world are already working with partners and people in the communities we serve to tackle these challenges and uncover new opportunities to create a brighter future, where everyone has a chance to prosper.

Stopping the spread of COVID‑19 in vulnerable communities

In Colombia, we’ve adapted our cash assistance programming to make sure Colombians and Venezuelan migrants who have lost income because of the pandemic can still buy what they need.

News of promising COVID‑19 vaccines gives us all reason to be optimistic, but people in low-income countries and refugee communities are likely to be among the last to receive them. Transporting and distributing vaccines around the world will create a massive logistical challenge, but that’s just part of the equation. Mass vaccination will also require a coordinated, collaborative effort to build trust in the vaccine and the governments who will provide it, particularly in areas mired by conflict and chronic poverty. With Mercy Corps’ decades of experience building relationships within communities in over 40 countries, we have a critical role to play in the global vaccination effort.

At the same time, we’ll continue helping people stop the spread of the disease, with handwashing stations, hygiene kits, sanitation training and public education campaigns to promote day-to-day safety.

With from a grant from Twitter CEO Jack Dorsey, Mercy Corps teams in Colombia, Haiti and Puerto Rico will be able to provide emergency cash to 4,500 vulnerable families, and reach 500,000 people with campaigns to provide accurate information about COVID‑19 prevention and treatment.
