I've decided to go vegan, although it's been a bit of a slow process. But both my husband and I feel like meat is too hard to digest, plus for me I sometimes choke on it because of my EoE. I'm lactose intolerant so I'm already dairy free. I've been considering it for years, it's finally time.
However, my soy allergy makes eating vegan a challenge. Does anyone have any suggestions or advice?

i’m also soy-free and have had challenges with veganism.
i use a lot of beans, cook lentil soup a lot and look for high protein grains like quinoa.
but a rule i follow is to combine rice and beans. that makes a complete protein. they dint have to be at the same meal.
i adore steamed vegetables and my rice cooker steams them well. i have about six kinds of rice and i’ve been known to blend them (tastes nutty).
i’m really an ovo lacto vegetarian for now.
as for vitamins. i take a lot. happy to write an article but i want my notes to do it.
my b-12 is sublingual, 5000 mcg, (tastes nice).
If there ever was a pill that my child would steal from me, that would be it

My wife’s been vegetarian for years, not full vegan as she still has dairy, but she’s not keen on soya, we use a fair bit of quorn which is a brand and is mushroom based , although some of it contains egg , they do now do a fairly good vegan range too, I know it had a bad reputation in America for a while due to possible alleged allergy problems, but these proves to be unfounded and were perpetuated by the unions in the food agencies to prevent it becoming popular.... any bit of a rant but it’s soya free and we like it ha ha🤗
Lentils and all other kinds of beans are great protein. If you worry about complete protein use a vegan protein supplement at first. Be sure to get B12 shots regularly since you have digest problems.

I do usually eat lots of different beans anyway. And I love quinoa which is a complete protein. I didn't know B12 could help with digestive problems, I'll definitely look into that, thanks!
All I can say is that if you feel like being vegan soy-free is too difficult, don't feel embarrassed to just take a step away from veganism, what you're vegan for, and decide from then on whether to continue or not.
When I was vegan, many soy-products supplied me with my necessary protein, so make sure to get enough protein from other places since you can't eat soy.
I don't doubt the chance that you could do great at this, but if it's ever malnourishing or being too difficult for you,
If you find yourself unable to take a step back (trust me, even though I had to for health reasons, the guilt still lingers with me) then think of this: If it's the unnecessary deaths of animals you believe is wrong, how is it unnecessary if it's saving your health?
As mentioned earlier, you'll probably do great on this! Just make sure to speak with your doctor maybe; also make sure to get lots of protein!

As much as I agree that the animals should be held to an importance, what about the person's health? If their health is suffering, they shouldn't feel guilty to quit. After all, how can anyone help ANYTHING without their health? Of course veganism can be an ideal we aspire towards, but it doesn't have to be an absolute, as in, it's ok to slip up or just take breaks from time to time- it's the 'perfection' of veganism that drives people away, just do what you can! What more can you do? Veganism is easier for some than others, so all people can't be held to the same standard that "veganism is a lifesyle".
