I think I’d be fine with either a hippogriff or a broom. Seems the most comfortable for me at least :)

Broom or Hippogriff, because of comfort.
though it would be fun to scare the heck out of people by flying on nothing, given that people who haven't seen someone die can't see Theseral's. Can't imagine a skinny, skeleton horse would be too comfortable to sit on though.
